Talking about food might be one of our favorite things, well, talking about it comes in right after eating it of course... We were thinking how funny it is that we will be sitting there enjoying one delicious meal and already talking about what we are having for the next one! {c'mon, don't try and pretend you don't do that too because you KNOW you do!} We are so thankful that a few pretty days have been shining through after this dreadful winter, which has put us in the mood for some lighter meals. Black bean salad anyone? We think so.... Please feel free to indulge in some gold margaritas with salted rim while noshing on this healthy, awesome dish.

Black Bean Salad Ingredients
1 can black beans, thoroughly rinsed
1 can corn, rinsed
1 c fresh tomatoes, diced
1/2 c red onion, chopped
2 c fresh lettuce, chopped {whatever kind you prefer!}
1/2 c shredded cheddar cheese
1/4 c black olives
1/4 c cilantro
1/2 c tortilla chips, crushed
1 avocado, sliced
1/2 fresh lime
3 tbsp olive oil
3 tbsp sour cream
salt and pepper to taste

|1.| Gather two large bowls to assemble the salads in.
|2.| Distribute lettuce evenly between two bowls. Top {each} with black beans, corn, tomato, onion, cheese, olives, cilantro, avocado, tortilla chips and sour cream. You should now have some towering, colorful salads.
|3.| Squeeze fresh lime over the top of each salad and drizzle with good olive oil. Salt and pepper each salad to taste. If you are feeling sassy, pour some salsa or hot sauce over the salad. Serve with frothy gold margarita and enjoy!
