crab cakes anyone?...

Being that we are landlocked here in Tennessee, it is hard to find good crab cakes in these parts... but after indulging on some of these delicious treats the other evening, I began to think that I could make my own....After doing a little research, I have composed a recipe of my own and I cannot wait to try it this weekend! I have decided that I am going to serve them over a bed of fresh arugula, with lemon juice and maybe some white wine for sipping :)

Ingredients
2 tbsp olive oil
6 green onions, chopped
3/8 c olive oil
16 oz of fresh crab meat
1 egg
1 tbsp mayo
8 ritz crackers
1 tsp garlic power
1/2 tsp Old Bay Seasoning
1 c Panko bread crumbs
salt/pepper

|1.| Heat 2 tbsp olive oil until hot, saute green onions until tender.
|2.| Combine crab meat, egg, mayo, onions, crushed crackers, garlic power, Old Bay seasoning, salt and pepper. Mix throughly! Don't be scared to get your hands dirty :)
|3.| Form into 1/2 in thick patties and coat patties with panko bread crumbs.
|4.| Heat 1/2 c olive oil in skillet on medium heat. Cook the crab cakes until golden brown on both sides.
|5.| Set them on a paper towel to drain and cool off.
|6.| Serve over fresh bed of arugula with lemon wedges... and don't forget the vino! Enjoy!
